Persian Chicken with Herbs

Melt 1 oz of the butter and sauté the onion.  Add chicken to the pan with the stock and seasonings.  Cover and simmer 1 hour.  Melt the rest of the butter and lightly cook parsley, chives, mint, and cilantro.  Add to the chicken.  Stir in walnuts, orange juice and rind.  Simmer for 30 minutes.  (You can stir in 2 beaten eggs at this point—optional).  Accompany with noodles or rice.

  • 1 boiling chicken
  • 4 oz butter
  • 2 medium onions, sliced
  • 2 cups chicken stock
  • 1 cup chopped parsley
  • 1 cup chopped chives
  • ¼ cup chopped mint
  • ¼ cup chopped cilantro
  • 1/3 cup chopped walnuts
  • 2/3 cups orange juice
  • grated rind of 2 oranges
  • salt and pepper
